Is this doable?

Relevant details:
We arrive at MCO at 1pm on December 30th, I have a rental car reserved. We are staying at Bay Lake Tower.

Can I make it (in a non rushed, awful way) to a Crystal Palace reservation at 3:45pm? (Stopping at BLT first to drop stuff, if room available)

In my head it works, is it a terrible plan?

There could be a delay with the flight. Or even if you land at 1 pm could take time to get your bags and then time to get the rental car and it is a 30-45 minute drive. Then time spent at the hotel and getting into the park I would not chance it. We usually when we visit arrive in the morning and only make a dinner ADR.

It is not recommended to book an ADR on arrival day, especially that tight. I have been in very long car rental lines at MCO. You might make it but you might not and it would add stress to your day and flight.

It’s a personal choice but if it were me I would not book an ADR that tight on arrival day.
