Is this doable for VIP Day?

If you are going to Epcot another day, I'd skip Frozen for the VIP tour. It's really not a ride that needs to be done more than once per trip.

And I agree with the Everest comments others have made. Other than that it looks good.
 
I agree with the others regarding AK. When is your Nav'i FP+? Personally, I would RD Everest (or get a FP+ for it) and ride it several times if interested (at RD, we've walked on 3 to 4 times in a row without a line building), do Dino and Nav'i with FP+. I would then meet the VIP Tour Guide at FOP, ride it at least twice (if interested) and head to DHS from there. I think you are smart to drop EP from the tour and just cover those rides during your other planned days there. With wait times and walking, you were looking at at least 1.5 to 2 hours just to do those 3 rides in EP. DHS looks good and I wouldn't hesitate to re-ride something you like - with your VIP Guide, this is the time to do it! Do you have other days planned at MK? If so, what FP+ do you have at MK on your other days? If this is not your only day at MK, I would drop rides like Dumbo and Barnstormer from your VIP list (unless you kids want to ride these repeatedly). If you guide can't get you priority access to Astro Orbiter, I would drop that too. That line is a massive time suck. I, personally, would look at my overall vacation park touring plan and use my VIP day to ride any hard-to-get rides (FoP, SDD, Smuggler's Run, 7DMT, etc.) that I really love repeatedly. It's pretty fun to be able to walk onto FoP through the FP+ line 2 times in a row!

Navi is at 11:45. We first have FP for Dino at 10:45 then Navi at 11:45 and meet guide at FOP at 12:30. Because it's going to be a long exhausting day I want to have a somewhat easy morning. Wake up, have breakfast and head to AK around 10am.
Wow, had no idea it'd take that long to do 3 rides at Epcot. I was thinking an hour with the fact that we are driven in the van between rides. That is a good chunk of time and probably not necessary since we have 2 other days that we will be at Epcot (few hours on arrival day and a whole park day).
We have 1 other MK day. It's a MNSSHP day so we'll only be there til 6pm. I think we'll get there early that day. Not RD early since we have 5 kids and that just feels like way too much effort to get everyone out the door that early. But 8am-ish. FP on that day is BTMR, Pirates & SDMT. My kids are 7-21 and way more about the big thrill rides than Dumbo and Aladdin type rides. Though we likely will ride those just because it's WDW and you kind of have to. :) But I can definitely take them off our VIP day and just do them our regular MK day.

It shouldn't take that much time. I posted above my experience being driven around Epcot for all three rides we did. We were in and out in under an hour. For Soarin', we were brought in a back way so we skipped the fast pass line and went straight into the boarding area.
 

This is what we accomplished on a busy day during Easter week 2018. We chose to watch the MK afternoon parade, so that took a chunk of time we could have used to go to HS.

VIP guide picked us up at AKL Kidani at 7:45 am.
Arrived at AK before 8am. At AK we rode:
Navi River Journey
FoP x2 * looking back, we should have gone on a third time and cut something else from our day.
Expedition Everest
Kali - nephews choice

Drove to Magic Kingdom. Grabbed snacks and water backstage.
At MK we did the following:
Space
Buzz
HM
Splash
BTMRR
Pirates

Watched Festival of Fantasy Parade (12:30) while having some snack. *Our VIP tour guide went to get us snacks while we watched the parade.

Mine Train
Met Talking Mickey

Drove to Epcot and did the following:
Test Track- drove to Frozen ride
Frozen ride- drove to Soarin'
Soarin
 
Definitely ask the guide for the best plan based on what you want to accomplish. They know what will work and how to get the most bang for your buck.

I also agree to use it for things like riding EE four times in a row. Don’t try to tackle every single item on the list. The beauty of the guide is giving you that convenience and flexibility. Not just an unlimited fast pass.
 
I will second or third the idea to NOT do EPCOT on a VIP day. We have done several VIP days, and we only made that mistake the first time. TT can take forever if the FP line is backed up. We didn’t even want to design the car, and it still took forever. Soarin’ can be long or short, you just don’t know until you get there. If there have been ride breakdowns that morning, it will really impact your time.

I just tell them which parks and generally which rides, and I let the plaid figure out the order. They are so good at maximizing your time as they do it all day every day. Do try to enjoy it and not just run from ride to ride. We are big ride people, but you can exhaust yourself or a child, and then the whole thing falls apart. It feels super expensive to stop and deal with a child’s meltdown in the middle of a VIP tour!

One thing we love to do is the VIP viewing of the parade in MK. You do need to tell them a few days in advance that you want to do this, and it is so fun! We just ask them to plan for us to be in MK around that time, and it is great. We also use the VIP for re-rides on the headliners that are difficult to get multiple FPs for, as I think this is the real value.

The other thing that can be done: the guide can leave some of you at the parade viewing, for example, and then take others for a ride on SM or something that some may not want to ride.

We eat at a CS lunch so that the guide and we can have a short rest break. I don’t do TS on the VIP because it chews up a bunch of time, but I think you will all appreciate a chance to sit for 30 minutes and rest and eat, rather than eat in the van. You are not in the van very long between parks/stops, so it may be a hot mess to try to eat in the van (besides the previously mentioned wrinkle of when the guide will eat).

The other thing that can come up is weather. If it rains, rides will be down and the plans will need to change. The guides are in constant touch with guides at the other parks, so they know which rides are down, etc. They can really flex during this type of event, but it can slow down the best laid plans.

I usually plan for 8 hours, but we often go a little over due to re-rides etc. If you have the budget for that type of flexibility, it can be nice not to be “on the clock” all day, trying to squeeze it all in.

I haven't read all of the responses, but you won't need to budget time for a sit down meal (unless you want one). They will have light snacks and water for you as you go from park to park. We normally eat a decent breakfast, go on the tour for seven hours just eating light snacks - we may grab a popcorn and Coke - then eat dinner when we are done. Stay hydrated if it is hot, but other than that no one is going to starve to death if they don't eat a meal in a seven hour tour.
