Yes added as you go along or you can pre pay.

You can adjust it up or down to the service you get.

Nope, as indicated, that is for a 7-night cruise. $12 x 7 nights x 2 passengers = $168.

Tip amounts are recommended... you can adjust this up or down if you feel that is warranted by outstanding/poor service.

Tips will be automatically charged to your onboard account, but you can pre-pay if you don't want a big bill post-cruise. Include tips, port excursions, spa and other onboard charges you expect, souvenirs, etc. Come up with an amount and you can pre-pay it all if you'd prefer.

Do the rotational dinners in MDR because it's a big part of the cruise, so we will definitely do so :)

Still confused- poster above you said for example $168 per couple.. Is that nightly??.... Yikes I guess I wasn't thinking to expect hundreds and hundreds in tips I didn't realize this factor. Alcohol won't be a big thing for us. Maybe a few here and there. We won't be doing much extra things besides like BBB and probably use room service here and there. So my main concern is knowing what to tip and how much to tip overall for our dining I guess.
As lanejudy said the gratuities are added to your onboard account. The amount added is $12.00 per guest (that's each one of you in your room) per night. That $12.00 breaks out to $4.00 per guest per night to your room host; $4.00 per guest per night to your dining room server; $3.00 per guest per night to your assistant server; and $1.00 per guest per night to your head server.

For 2 people on a 7 night cruise that would be $12.00 X 7 (nights) = $84.00 per guest. 2 people = $168.00 for the whole trip.
 

As mentioned, the tips are per person/per night and that includes your room host/hostess. They are automatically charged to your account, you receive notice a day or so before the end of the cruise along with tip envelopes should you wish to tip more. They've already broken down the amounts for you :)

The servers who work dinner in the MDRs work the buffet for breakfast & lunch and/or the sit down breakfast/lunch options - they're serving you all day. Anyone who gets you a drink or assists you with food on the ship is one of the evening servers from the MDR (well, I don't know for certain about the pool deck food CMs, but I wouldn't be surprised is they were). In my opinion, think of it like the tips you pay to your server are really covering ALL food service during your cruise - they just apply it to two names/faces for convenience.
 
You guys are awesome, I get what your explaining now. So it's not like $168 a night for a 7 night cruise it's more like $168 for the whole cruise (give or take). Thank god for these boards and all of you, getting to know the ins and outs :)
 
well, I don't know for certain about the pool deck food CMs, but I wouldn't be surprised is they were
I do know that on our first cruise, our assistant server was clearing tables poolside during the daytime. And on a couple of others, our main server was behind the counter at Goofy's Galley and Pluto's Dog House.

On Royal Court/Palace/Tritons/Lumiere’s day, CMs do breakfast, lunch & dinner, unless it’s on Castaway Cay day, then they are doing lunch at Cookies. On their Animators day, they work Cabanas/Topsiders/BBB breakfast & lunch. On Enchanted Garden/Parrot Cay/Carioca's day, they do all 3 meals. On the last AM, Palo servers work the buffet so that your server can serve the breakfast in the MDR.
