I’d like to take one from AKL to the contemporary and again from AKL to the MK. Is there any way to save on that? Can I pay with a Disney gift card? Also, what is the standard amount to tip?
You can use Lyft promo codes towards them. That's the only way. No, you cannot use Disney Gift cards to pay, as they are operated by Lyft. You pay Lyft via the app.

Other than the Lyft discounts mentioned above, the only way to save on Minnie Vans is to not use them.

If you want to leave a tip, do it. If you don’t want to leave a tip don’t. There is no standard tip on Minnie Vans, when the service started they didn’t even allow tips! Thankfully that policy changed so if you want to tip you are welcome to. I tip 15-20% on rideshares normally but I don’t tip on Minnie Vans since the drivers are full time Disney employees. To each there own. If want to tip just make sure to budget for it. Idk if you can see cost estimates but for me the app currently shows AKL-MK Minnie Van at ~$45 no promo and no tip so there’s a starting point for you.
Regular Uber MAY have one car seat. There definitely are Ubers that do, but it might be a bit more costly and a longer wait. I'm taking an inflatable booster this fall, so DD and I can easily do Uber/Lyft without worry. Search for Bubble Bum on Amazon and you'll see that and some others. If you can make that work for your child in a booster, you may be able to make Uber work. I know Uber has gift cards, which you can sometimes get at a discount.
Minnie vans now have a flat fee of $15, plus $2.75 per mile. You can take a bus from AKL to MK by Disney bus transportation and then walk (5 mins) or catch monorail from contemporary.
From AKL to MK you could just catch a bus. Buses run early for pre-park reservations, and do not require car seats. (Just letting you know, you do have this option)
