My wife and I are staying at a value resort in September to take advantage of free dining. I'm thinking of surprising her with a couple nights in a DVC suite, but I don't know if I can rent one for two nights in the middle of the week.

You can rent only one night in a DVC unit but I'm pretty sure you cannot receive the free dining plan while staying there. The free dining plan is only for "packages".

that what I love about DVC you can stay one night or more than a month - if you have the points and there is availability.

You are correct. DVC members staying on points do not qualify for free dining. They can purchase the plan without also purchasing a ticket, though.
