Is one day enough at MK with ETPE and EEH?

For months my plan has been to spend 2 days at MK on our upcoming trip in early December. However, I've now gone through all the rides and shows with my DH and kids (9 and 12) and our list of must-dos seems short. Not to mention that we're staying at WL on a Wednesday, so as long as nothing changes, we will have access to early entry and EEH and we plan to use it. We will also purchase Genie+ as well.

Our must dos are:
Jungle Cruise
Pirates
Enchantment
It's a Small World
Mickey's PhilharMagic
Peter Pan's Flight
Seven Dwarfs Mine Train
Thunder Mountain
Splash Mountain
Space Mountain
Haunted Mansion
People Mover
Carousel of Progress

Do you think would one day be enough to get the above done? Assuming that we use early entry, spend a couple of hours back on the hotel in the afternoon, and then stay for extended hours until 11pm/midnight.

Or is it too much for 1 day and we should keep
2 days?

If your visit to the Magic Kingdom is a list of attractions you need to check off, then one day will probably do it. It wouldn’t be enough for me. I like slowing down to soak it all in.

Do you plan on stopping for many photos, watching many shows, seeing the parade or the fireworks? Those things will make a difference especially if you care about getting good spots to watch those things.
 
Based on our experience it's doable (but we went on a week when it was "light" for Disney). I would go early hours and head first to Seven Dwarfs Mine Train (unless you are paying for it as ILL). Also, the earlier you go, the closer you will be to the start of the line when they let you walk to the ride. i.e. don't show up for 8:30am if park opens at 9am and early entry starts at 8:30am. We were in line waiting for them to let us head to the ride for 8:15am (at the gates by 8ish) and we still had about a 40 min wait.

Are you purchasing Genie+? That would help save time for the headliners , especially the three Mountains and Peter Pan. The one thing to keep in mind is that rides do go down. We had that happen a lot but we went in August and so when there is any rain or lightning near by, all outdoor rides shut down.

Otherwise, seems very doable, esp with Genie+.
