Is it worth doing a last minute trip?

Wasn't sure where to post this so sorry if I'm not yet doing my happy dance! Our next trip is booked for next year but we had hoped to visit Florida & WDW just the two of us in September. However, due to my FIL's deteriorating health we've not booked anything yet.
We are happy to try for standby flights from the UK at an appropriate time (DIL works for Virgin and can sort that).
We would happily stay anywhere so accommodation isn't really a worry (ok I'll still try for POFQ!)
My worry is with all the pre-planning and pre-booking, dinner reservations etc for a normal trip what chance would we have (in others experience) of getting enough out of a last minute trip?
 
We've gone and never planned and always had a great time! Now that we're really getting into it, thanks to buying into DVC, I'm learning about the additional things that we didn't do bc I didn't know. Not knowing didn't stop us from having a blast, though. I say go for it! What's POFQ?
 
I looked it up ... the FQ through me off :) what are your dates? Finding a place in Sept is always possible, even if not POFQ. And you may find you like other places, too.
