Is it REALLY 180 + 10?

It is 180 days from your resort-check in date, and your length of stay thereafter of up to 10 days.

If you are not staying on-site, it is 180 days, flat.

If you have a 3-night on-site stay, it is 180 days, and you can book dining 3 additional days after that.

It's not 190 days from check-in.

I see, but my question was more of a technical one. On the website I ONLY see the 180th day open; do I need to "fill in" a reservation for day 1 and then the other 9 days will 'pop up' for nine additional days?

No. When is your check-in date?

Probably yet another glitch with MDE. Have you tried both website and app?

This also happened to us when we tried to book reservations further out than 180 days. We had to call to make adrs and they were unable to tell us why we couldn’t do it online. It seemed to just be a glitch or something.
