I've stayed at Marriott Lakeside a few years ago for an early flight. IIRC, they had/have free shuttle service to the airport. That being said, I don't recall seeing any walkways/sidewalks along that route.
It really is a shame they do not provide a walkway. 2-3 miles is easily walk able for most of us. Does this mean that the ONLY option to be able to walk to the airport is one single hotel inside MCO?
There is no safe pedestrian path. It's off highways that cannot be walked along, what with the volume of traffic to MCO there's no dinky little side roads to get there. There are other airports that don't have pedestrian access.
Public transportation, Uber/Lyft, and airport hotel shuttles are readily available.
I guess I just don't see the need for pedestrian access? The infrastructure for miles of walking path for seriously minimal use would be crazy expensive.

Nearly all of Florida revolves around car transportation. Go with the flow and drive, use Uber or a bus. People are looking at their phones when driving, not for pedestrians.
