iphone question...email?

I got my iphone today (4, verizon) and the woman at verizon set it up for me. one thing she did that I am not crazy about is set my email to open automatically. I would love to be able to hit the button to access my email, but I want the option to log out so it isn't logged in all the time. does anybody know how to do this? I can't seem to be able to figure it out.

Not sure that you can..but you can make an entry password for your phone overall.. it would pop up the key pad for password entry after you slide to unlock.. setting then general then passcode lock

Go to Settings, select "Mail, Contacts, Calendars", look for "Fetch New Data", set it to Off.

I set it to off, but it still allows access to my mail when you hit the button
