Instead of deviled, how about pickled eggs?

Oh how I love the pickled egg :lovestruc:lovestruc I'll have to find my old recipe I used to use ALL the time. I've been lazy recently and just throwing boiled eggs into the leftover juice of my favorite pickles with some sugar and beet juice (from the can). I only like the pink/purple ones though, for some reason the ones that are white don't taste the same to me :confused3. I look forward to other's recipes! :goodvibes
 
I tried once to make my own red-beet eggs from scratch. They didn't turn out, couldn't balance the sugar and vinegar. A few months ago we were discussing this at work and someone suggested using pickled beets. SO EASY!! I use a 2 pound deli container and usually make 2-4 eggs at a time (I'm the only one in the house that seems to eat them) and so the juice covers them.
 

:love: I have not had beet eggs in forever. The longer they are in the solution the better. My mom makes the best. Yummmm.
 
Am looking forward to seeing lots of new recipes. My hubby makes really good ones with beets, juice, a touch of sugar, and onions. I'd love to see a recipe for the white ones.
 
Ive never heard of putting sugar in them. Interesting. We usually put the eggs in a container, cover them with vinegar and then add a can of beets and let them sit until pickled. My mom likes hers really pink all the way through but I cant stand to wait for them.

I didn't know there were so many pickled eggs lovers! My mom used to make them, but I am the only one that will eat them. Luckily, when we go down to Amish Country, the restaurant there serves them on the salad bar, along with pickled beets. They also have yellow mustard eggs. I haven't tried those.
 
I grew up in Amish country and LOVE:lovestruc:lovestruc:lovestruc pickled eggs! I have never heard of putting sugar in them. I have one of those big plastic mayo jars, think Sam's club size, I put in two dozen eggs, three cans of red beets and about 1/2 cup of white vinegar. I don't actually measure, just pour it in so I'm guessing on the 1/2 cup. Put it in the fridge and turn it or mix it every few hours so all the eggs get an even color. I usually let them soak for 2-3 days, til the yolks are pink too. Yum, not Easter without them. I taught school in Hawaii and we had an international day for the staff where everyone was to bring a dish from their country and I was racking my brain and my DD suggested the eggs. Well I made them and they were so pretty but NO ONE would eat them! They had never seen purple eggs. These are the same people who eat sushi and octopus and red chickens on a daily basis! I couldn't even get any one to taste a tiny bit.:sad2: But my DD and her friends, who were way more adventurous than the teachers chowed down on them after school:rotfl2:
