We're going to have some breakfast/drinks delivered to the Poly when we arrive, if our room isn't ready will they hold it for us until our room is ready? (Nothing perishable like milk/ice cream.)

Yes. Bell Services will hold your grocery order for you.

As stated, they will hold your groceries for you, including items that need to be refrigerated or frozen. Note: if you elect to have Bell Services bring your order to your room, Disney will charge you a $6 delivery fee for that. You can pick up the order yourself with no fee. That delivery fee does not apply to normal luggage delivery.
