In culinary school or college, do you decide when you start the next semester?

So I was reading the requirements for the culinary program and they said I cannot be taking time off from school. So my conclusion, is you can pick when you go back to culinary school correct? Or is it you can pick what semesters you resume school at? The whole thing confuses me sooo much

Basically, what they mean is you cannot be taking a leave of absence from your school when you apply for the program.

It just means you must be an enrolled student at a college when you apply. (You would be accepted for the following semester).
