I would make all of the reservations 180 days out.

I would book them all 180 days out and then make changes if you need to. Better safe than sorry. Some of those, like Le Cellier, fill up quick and if you wait you may end up not being able to get in.

I always started 180 days out I just keep a schedule of my reservations. If plans change or we change our mind I just call and make modifcations as available.
