after reading the OP again, I suggest that you cut down on your time in WS and spent more time in FW. I really think your DD would enjoy FW more than WS.
 
My now 11yoDD says definitely Spaceship Earth -- 'cause it's your first ride and it's such a gentle entry into WDW .

Well, we decided against going back to FW after breakfast, because our DD is totally fascinated by foreign cultures, languages and music, so I'm almost certain she'll enjoy exploring the countries 10 times more than she would enjoy the attractions in FW. In fact, the biggest reaction we got from her was when she saw the video clip of China... she was ecstatic that she was going to get to "go to China", and the first thing she asked was if they would teach her how to write her name in Chinese. :teeth: And scenic-type films set to beautiful music totally put her in a trance. She loves them. So although many kids might find it boring, I wouldn't be surprised if the WS ended up being one of the highlights of the trip for her.
 
On one of our trips, my DD chose as her souvenir one of the Chinese "parasols" (can't think of the right word !) . The CMs write the child's name in Chinese characters on the parasol - or as close as they can phonetically spell the name, anyway ! Maybe this would be a good choice for your DD, too.
 

My almost 4yo picked JII. It should be pretty easy to get onto in the morning and a nice way to start your day in the park. Our DD thinks Figment is very cute and cool. After the ride there is a "laboratory" of fun experiments to try out. This is the part that DD really enjoys. There are stations to take your picture and e-mail friends and family back home, there are electronic orchastras you can start and set the pace for by the movement of your hands, there is an area where whatever picture you step on the floor you will hear that sound. There are others too that I just can't recall at the moment.

Marie - I just read your post about your DD wanting to learn her name in Chinese. She certainly will be able to do so! Just go to the KidCot station in China and the cm there will write her name for her in Chinese on the back of ther "mask." They will also ask what year she was born and mark her "mask" with her zodiac animal. The Chinese cm we talked with was very friendly and encouraged the children to ask her questions. Your DD sounds like she will really enjoy the Kidcot stops.
 
Journey, well I don't have a 5 yr old but I know this was my favorite ride as a kid in EPCOT. So there is my vote!
 
Our 6 year old daughter's favorite attraction at Epcot is Mission:Space. She first rode at age 5, and it quickly took over Test Track as her favorite.
 
On our last day at WDW I asked my 4yo DS what park he wanted to go back to (expecting him to say MK) and he told me Epcot so he could go on Test Track. I didn't read all of your responses and know that wasn't on your list, but it was my sons favorite thing to do at Epcot.
