For a first time, I would go Chef de France. We have had many experiences at all the Epcot French eateries but it sounds like you really are looking at table service. As great as Monsieur Paul is (the service we have had is just amazing including once when our little daughter decided she had to go to the bathroom right as food came out, the waiter realized my wife's duck was getting too cold so he brought a new one out and replaced the old one when she got back to the table, no asking, no charge, just a simple we want you to enjoy), you really end up with just an entree each and maybe an app. If you want to taste a variety French cuisine, Chef De France has a better selection of apps and shareable dishes that are still really good. With de France, you can order multiple things to share and try, spend less than you would at Paul's, and feel like you have been on more of a culinary adventure. And if you really liked what you ate, try to get a dinner reservation upstairs at Paul's the next day!
