If you made a recipe from the Crockpot thread..

I made the crockpot chicken with cream cheese except now I put my own twist on it. I make up a big pot of blackbeans (cheaper than can and less mushy) and use a bag of frozen corn (I find the frozen stays crisper than the can). I throw in a jar or 2 of salsa depending on how many beans I've made up, add in a can of rotel or diced tomatoes depending on what I have in the cabinet. I don't use the cream cheese as we don't need the extra calories and can't really tell the difference.

My 14 yo loves this stuff. Once we had eaten the chicken out of it, she eats the beans and corn mixture as a side to something else. I also have shredded the chicken and used the mixture over nacho chips. It freezes very well which is good since it is just 2 of us and I can make a big pot for cheap. It can be served with rice or as a burrito or taco filling. Many uses. Told dd yesterday I would make it for her tomorrow. Simple and inexpensive as far as meals for us go.
 
We have done the PP recipe as well and my husband loved it. We also do quite frequently the frozen chicken breasts that you use with bbq sauce and then shred. We put in 3 decent size breasts and can get 2 dinners and 1 lunch out of it. Having it tomrrow since it's going to be almost 100 degrees!
 
Italian Chicken


6 boneless skinless chicken breast
1 can tomato sauce
1 can fire roasted tomatoes
1 package mushrooms
1 tbsp. Italian Seasoning
1/4 cup parmesan cheese

Cook on 6 hour setting. Around 20 minutes before serving
layer provolone cheese over chicken, recover and let the cheese melt.
Cook up your favorite pasta and then serve the saucy, cheesey chicken over the pasta.

This is delicious.
 

Beef Tips in Gravy


1 package (about 1.5 lbs.) of beef stew meat
1 can Cambell's Golden Mushroom Soup
1 can Cambell's French Onion Soup
1 sliced bell pepper
1/2 teaspoon garlic powder
1 teaspoon black pepper

Combine all ingredients in your crock pot and set on the 8 hour setting.
This is great served over egg noodles, rice or mashed potatoes.
 
This is really just a heat and eat, but comes in handy on nights you know the kids have sports practices:

1 bag frozen all beef meatballs

Combine with 1 jar of spaghetti sauce (I like Prego)
Cook all day on low
You can serve these over pasta or on hoagie rolls with melted provolone cheese.

OR

1 bag frozen all beef meatballs
2 packets brown gravy mix (mixed as instructed)
Cook on low all day.

These are great over rice or mashed potatoes for a quick meal.
 
Asian Chicken Breasts

4-6 boneless skinless chicken breasts
3/4 cup terryaki sauce
1/2 cup soy sauce
1 small can pineapple rings with the juice
garlic, black pepper to taste

put the chicken in the bottom of the crockpot
pour the soy and terryaki, garlic powder and black pepper over the chicken. pour the pineapple and juice over the chicken.

Cook on the 6 hour setting.

serve with rice and steamed veggies.

Don't be sorry, I'm totally trying the one with the pineapple :cool1:! I'm the PP who posted the chicken/corn/salsa/black beans/cream cheese recipe on the old thread-- we still eat it A LOT!! I'm also forever grateful to the person who posted the chicken 'n dumplings recipe!!! I LOVE it!! --Katie

Don't be sorry, I am in desperate need of crockpot recipes. I have 3 days a week now that I am gone form about 3:30 until dinner time, well a little past dinner time and I need to have it ready when I walk in the door.

Thank you for this recipe. I make it about once a month. Rare to find something dd actually asks for and then continues to ask for. She says she could eat it everyday...LOL. I'm sure she would get tired of it, but it does have many ways to use it so it doesn't always seem the same. One day of cooking yields several meals and freezes very well so I make individual servings for her to just heat up. It's a 3 thumbs up in our house although like I said we don't do the cream cheese cuz well we are both a bit chubby and don't need the calories.

Does anyone know where the original chicken/beans/cream cheese recipe is? I'm guessing there is an older crockpot thread on here. I'm off to search but if anyone has it handy, I'd appreciate the link.
 
I'm making the honey mustard chicken right now. It smells good. I'll be back later to tell you how it tastes. :thumbsup2

The honey mustard chicken was alright. Nothing really that special, but it tasted good. It was really dry (like all chicken breast/crock pot recipes) so my kids would only eat it with ketchup. :rolleyes: I made mine into a sandwich with cheese and spinach. I plan on trying the buffalo chicken recipe soon (hopefully tomorrow).

I have this problem with the chicken being to dry. I start it at lunch time instead of early morning and it is not dry at all anymore. I know this won't work for everyone since they leave in the am and are unable to come home for lunch.
