I've gone in the third week of October for the past six years and I don't think that we've ever waited more than 20 minutes for a ride. But it's usually more like 10 or 15. We do make extensive use of fast passes. I remember a pretty long wait for Buzz Lightyear one time. Also, we've had Space Mountain break down while we were trying to use a fastpass, so that took a few extra minutes.
Safari and Exped Everest at Animal Kingdom, Soarin - the usual "big ones" at each park - but we found that in a lot of cases when it said 40, really it was closer to 20-30.
But as PP said, use of FP pretty much eliminated that issue.
October is my favorite time of year to go. Enjoy!

we did a single day to epcot in oct during a quick weekend trip and we basically walked on to anything. It was so great to be able to visit the shops without any crowds, we really took our time and enjoyed everything.
Dumbo had a 60-min wait when we went in October. That ride always seems to have a 60 min. wait - for what seems like 1 minute of riding! Nothing else was that bad.
The longest wait time we saw was in 2005- it was the 1st weekend in October, and the Free Dining promo was just ending. It was also during the Food & Wine Festival, so Epcot was really crowded. We didn't wait in line for it, but Soarin had a 110 minute wait time posted, and the FPs were all gone. this was about 4pm, and it was also when Soarin' was pretty new.
That wait was really unusual, though- the rest of the week, we never waited more than 20 mins for any other rides throughout all of the parks (we did use FP when necessary, and did the big rides first thing in the AM). Soarin' had at least a 60 min wait time posted every time we saw it all week, so we never rode it on that trip.

Yup- the actual ride time is 90 seconds!! We only ride it when we arrive at rope drop- we hurry to Dumbo first thing in the morning and get it over with for the day. Hopefully, DD will outgrow her need for Dumbo in the next few years, so we don't have to hurry there right after rope drop.
Been 3 times in October, longest line we waited in was POTC and that was about 30-40 minutes. But it was a Sunday and it was after its refurb. We did FP for almost everthing else. Rode EE 5 times one morning with very little wait, maybe 10 minutes or so.
