I agree with the park-to-park ticket at Universal, but if you have to pick only one option I'd do Islands of Adventure (it has more rides than the universal side and many of the big universal ones are duplicated to a degree with enjoy, like Hulk and Velocicoaster. But, it also has some good mild thrills and family level attractions. Everyone would probably enjoy Kong, Spider-Man, Storm Force Acceleration, Ripsaw Fall, Bluto's Bilgerat Barges, Jurassic Par (though it does have one big drop at the end, otherwise mild), Forbidden Journey, Hagrid's (it's a big coaster but stays fairly low to the ground for the most part so wouldn't put it in the major thrill category, more family level coaster).
Depending on tolerance for thrills of the younger two I think everyone could ride most stuff. To me, Hulk, Velocicoaster, and arguably Rip Ride Rocket are the only extreme thrills at the parks. And depending on how busy it is, you could fit in most of both parks in one day if you are just focusing on the rides.
