How do you make gravy?

We deep fried last year but we also had a Turducken. We were going to just deep fry 2 Turkeys this year.
 
I heard on the radio the other day, that Consumer Reports tested gravy mixes and the "Knorr" brand of Turkey gravy dry mix is the best tasting. :goodvibes

I know some people that will bake a small turkey or a turkey breast and mix those juices with a package mix of gravy. My MIL did this one year and it was pretty good--and we are gravy snobs-we all make homemade gravy. I don't know what mix she used though.
 

We actually don't have gravy. We generally like gravy, but the turkey is so moist and flavorful that we find we don't want it. Also, since we have sweet pot, we don't need it for those either.
 
You don't have to have turkey drippings to make gravy. Use chicken broth or stock and contimue on with the normal way you make it.
 
I adore Williams-Sonoma's Gravy Base. It's super tasty, and you can never have enough gravy!

My Mom deep fries her turkey, she makes her gravy with chicken stock instead. It's always delish!! :)
 
Turkey stock. We still boil the neck and giblets the night before, and use that stock and pickings for gravy and an addition to the dressing.

I might be regretting that I only bought 2! Last year I went on Black Friday and picked up two more, but I don't want to fight the crowds this year!

So do you store the turkey in another bag over night or just on a platter with wrap. I don't want to open them for the fear of storing them in my only refrigerator.

I actually don't do mine the night before. I take the little bag of giblets out right before I inject my turkey for frying. I put the seasoned giblets in a small pot with a little diced onions, celery, and garlic. I fry that down a bit until the giblets are browned well then add water and a tablespoon of cornstarch. I let this simmer on low while the turkey fries then strain and serve. You can strain or not strain up to you.

Now I am sold on the jar gravy. One year I did a Turkey breast also, not deep fried for left overs, and used those drippings.
