If not IllumiNations, then what?

We are going to WDW 2/27 - 3/6, have our reservations (Dolphin), and am now planning out all the PSs we want. We will be there for my B-day, and gonna try to get an IllumiNations cruise for that night, or any night for the week we are there. But if for some reason we can't (which more than likely we won't be able to get), what do you suggest we do? There will be 5 of us, 2 adults, 3 kids (11, 8, 8). Any input on Fantasmick Dinner Package? Thanks!
