Would my chances be better at Dolphin or Swan? Dolphin, I assume, has more rooms so chances may be better there?

If I have enough points to upgrade just one night, can I do so and switch back to the original room after that?

jaye....yes, to both! You may even be surprised if they upgrade you for your whole stay(just don't plan on it, to avoid disappointment!) And chances are better at the Dolphin because it is larger. (It may depend on when you go, also)

I think the answer is - it depends on how full the hotels are. How booked up during your planned stay - and what kind of guests are there (convention or vacation) as convention guests normally don't book CL but can impact the overall inventory of the hotel.
Well it may seem like the Dolphin would since it is larger, but I was told that it really depends on how full the hotel is - the week I was there the Dolphin was sold out due to a conference (and some rooms being rennovated) but the Swan was not, in fact they had quite a bit of inventory left.
Anyway when I checked a few days prior to our arrival the agent looked up both and told me no way on the Dolphin but no problem with the Swan, so we kept our reservations there and we were upgraded during our stay to CL.

What are chances at the Swan (providing the resort is not full) of getting upgraded to club level without Starwood points? Just have AP and Preferred Guest membership. Are chances better by booking a balcony room rather than standard and by booking several months in advance or does it even matter?

did you call Starwood or the resort to check? I always call a few days aheaad of time to confirm the reservation, but I have never asked anything about the room....I need to double check this time about the difference in the crib vs. a kids roll away, maybe I'll ask them. What is it I am asking for? Where my room is blocked?

How many points do you need to upgrade at the Swan or Dolphin?

I believe it is 1000 points minimum, but you can check yourself by going to spg.com, look under member benefits and there is a chart for the upgrades.
