There's a lot to do in Vancouver. I did one night pre and post in Vancouver for my
DCL Alaskan Cruise three years ago and it wasn't enough time to do everything I wanted. I did the following:
Capilano Suspension Bridge--Free bus to bridge that sits near Convention Center. It leaves at certain times, so ask your concierge for the schedule. They also have a free bus to Grouse Mountain that leaves from the same spot, but I didn't have time to do that. I had planned to do the DCL debarkation tour to both of those places, but they cancelled it because not enough people signed up.
Stanley Park--I rented a bike the first day I got to Vancouver from a kiosk down by the pier to the left of the Farimont Pacific Rim hotel. You can also drive the loop in the park, but since I didn't rent a car I decided to bike it. It was fun and lots of other people were doing it. It's the equivalent of Central Park and they have numerous statues and other things to see. The scenery is beautiful!

Although I didn't do it, there is also a Hop-on Hop-off bus that stops by the Convention Center that will take you to the other major sites. I think there are two loops for the bus.
Unfortunately, I never made it to Chinatown Tea House and gardens, the aquarium, or the other places on my list.
As far as food goes, they have everything. All you have to do is go a couple of blocks to find what you want, be it fast food or fine dining. There's a mall, relatively speaking, in between the hotels near the convention center that has a McDonald's, Subway, and other quick eats. The building also has a small convenience store where you can get bottled water and other beverages.
