Had the same situation last trip and we spent it at D Springs, got in some last minute shopping

We just got off the Fantasy in August. We had late flights too and had planned to go to the space center, but they announced the closing of the Great Movie Ride. We did the other parks before the cruise, but had skipped the Studios due to construction and time constraints. So we ended up going back to visit the GMR one last time. We were able to ride ToT, RRC, TSMM, GMR, visit One Man's Dream and have lunch. It was also the first time we rode the parking lot tram. It turned out to be a great day, even though we didn't make that decision until the day before the cruise.

If I have a few hours to kill before boarding a plane I tend to just put my headphones on and read a book.

There's always Crayola Experience. It doesn't look like it's ever crowded and it's not far from the airport. About 15 minutes.
