My suggestion for something romantic would be a carriage ride at Fort Wilderness.
As for dining, I really enjoyed Narcoossee's and California Grill. Our service at CG wasn't rushed like JSG's but it wasn't relaxed either. The Wave is one of my new favorites, although it is dark in some spots. Our last table wasn't that dark.
If it was me, I think I'd do Narcoossee's, watch the fireworks, and do a carriage ride. If/when I find that special someone that will be my plan.
