Ideas for leftover roast chicken?

Another vote for chicken pot pie. My DH loves it more than just eating the chicken.

My DH also. We normally don't even eat the roast chicken by itself as DH doesn't care for chicken on the bone and no one but me will go near dark meat. The sole purpose of a roast chicken in our house is some other recipe. The faves are pot pie, chicken enchiladas, and soups- tortilla or
noodle.

The easiest way I can think of to repurpose roasted chicken is to dice it and add it to broccoli cheese casserole. You can also add leftover rice if you have some to stretch it out. I take a few ritz crackers and break them into big pieces and mix them in (not on top). Adds a slightly sweet layer of flavor.
