Ideas for leftover roast chicken?

I am having a birthday dinner for my sister tomorrow. The problem is I will either have 6 people to feed or 9.:rolleyes1
I have three teenage brothers who I haven't gotten confirmation from. I'm sure I'll hear from them tomorrow but I just took 3 whole chickens out to thaw in case they come.

So on the off chance that they have tennis or play practice or soccer or whatever teenage boy thing keeps them from coming..
What can I do with a leftover roast chicken? Just looking for some fun meal ideas so that it doesn't go to waste.:)
 
Often when I roast a chicken I'll roast another, shred it and then refreeze, so you could always do that (yes, it does get dry, but I make sure to make something extra saucy).

So, you could do:
Casseroles (chicken and rice, chicken and broccoli, king ranch, etc).
Quesadillas (just add salsa and cheese)
Chicken salad (nice this time of year)
 
Whenever I roast chicken, I take the carcass and make lots of broth to freeze. You can simmer it with some wine and thyme in the water, beer and bell's poultry seasoning, or, for a tasty Asian noodle soup, you can add bean sprouts and few other seasonings (it's slightly sweet, delicious with rice noodles).
 
Shred the leftovers for enchiladas, chicken a la king or make a chicken pot pie and freeze it for when you need a quick supper.
 

All leftovers go into a burrito shell for my husband's lunch. He gets a kick out of his "mystery" burrito lunches. i just add cheese, veggies and ranch dressing. Ranch in the great equalizer.

Chicken soup, chicken salad, chicken wing dip, bbq chicken sandwiches, stromboli, on pizza....the ideas are endless!
 
All excellent ideas!! All I could think of was sandwiches and salad.
Especially pot pies and Chicken a la King. I haven't made either in so long!!

I usually do an extra roasted chicken too, for the leftovers! Our favorites are chicken and dumplings and barbecued chicken pizza. Or our odd little thing we made up that gets rave reviews!

Top a tostada shell with refried beans, sprinkle on black beans and corn, sprinkle on chicken and cheese. Bake for just a minute until cheese melts. Top with fresh lettuce and diced tomatoes. You can add salsa and sour cream on top if anyone wants it. Super cheap, very filling and delicious!

We also do the same between two flour tortilla's, then flip on a hot pan like a grilled cheese. Cut like a pizza...super yummy!
 
I often use chicken leftovers to make Chicken Tetrazinni. Mix 1 can cream of mushroom soup, 1 can cream of chicken soup, diced green pepper, diced pimentos, canned sliced mushrooms, some Worchestershire sauce, garlic salt and pepper and heat through. Mix in the leftover chicken. Mix well with 1 lb cooked spaghetti, 1 cup chicken broth and 1-2 cups of shredded cheddar. Bake at 350, covered with foil, till hot through, about 30-45 minutes. Remove from oven, top with more shredded cheddar, return to oven to melt the cheese and serve. It's a favorite dish in our family. It freezes really well, too, so I usually make 2 casseroles and freeze one.
 
My DH can eat a whole roasted chicken all by himself and then ask me what is for desert, so I don't have this "problem" very often. But my favorite thing to do with leftover chicken is to make chicken salad for sandwhiches!
 
We made flat bread pizza last night with leftover chicken. Flat breads with BBQ sauce as the pizza sauce, then the chicken, red onion and green peppers. Topped with shredded Monterrey Jack and Cheddar cheese. It was GREAT! Bake at 350 for 10-15 minutes.
 
I make fried rice with leftover chicken. It also uses up leftover white rice (which we always have laying around the fridge). I use a little olive oil and dice up an onion and 2 garlic cloves, just cook until fragrant. I also add in broccoli and diced carrots for crunch. Add in 2 eggs, scrambled, cook through. Then add in the chicken, I dice or shred it, heat through. I also add a touch of ginger, siracha (sp?), and salt & pepper. Then add in your rice, combine it all, then I use 1/4-1/2 cup of soy sauce, a pat of butter and make sure it's all stirred well and warmed through. It's so yummy!
 
I got a final confirmation of 2 teenage appetites and one is going to soccer.
So looks like I might have just enough with all the sides!
Thank you for all of the ideas. I think I might start making two at a time when I make roast chicken to try these ideas!

That's exactly what I do, it tastes incredible.
 
I like to make a basic risotto (with fontina cheese) and add the leftover chicken and asparagus.

The family doesn't like regular rice casseroles, but I have to make a double batch of risotto if I want any!
 
Another vote for chicken pot pie. My DH loves it more than just eating the chicken.
 
This is usually better in the winter but great for leftover chicken. It is a soup. I freeze it in single serving for those nights we need a quick dinner.

Bring to a boil 64oz chicken broth and 2 cans cream chicken soup
Add leftover cooked chicken, 2 packages Knorr's chicken rice side dish, and a package of frozen mixed veggies. Bring to a boil again, then simmer 15 minutes. So yummy!
