I have 3 boneless chicken breast, looking for an easy suggestion on what to do with them for dinner. I am sick of shake n bake. :)

Our standard "go to" other than plain, which is how we eat it, is to grill, then put cheese and mushrooms on top.

I like to bread them with Panko Italian flavored bread crumbs and then bake it.

Or for a quick easy, tasty chicken I season them with salt, pepper, garlic, and pour Wishbones House Italian dressing on it and then bake it. My kids love this!

Throw them in a marinade and get out the grill. We're grilling tonight and tomorrow night. Easier cleanup.

Grill or bake, shred it up and add 1/2 c barbecue sauce and 1/2 c shredded carrots. Mix together, put on kaiser roll with a dab of ranch dressing. This is one of our favorite sandwiches around here. So easy and delicious!

that's all we eat is boneless, skinless chicken breasts! lol Yesterday I made monterrey chicken...grill the chicken until just done and then smother each of them in 1tbsp bbq sauce, 1/4 cup of shredded cheese (I use 2%), 1/4 cup of diced tomatoes (drained) and 1tbsp real bacon bits, heat in 400deg. oven for 5 mins until cheese is melted. Had brown rice and a salad with it, yum!

simmer or crock pot with Franks hot sauce - shred and serve with a cold salad

marinate in lemon juice and a pinch of salt & pepper - bake or george forman grill in place of BBQ

wwwlkraftfoods.com has great recipes. We have been using alot of the Philly Cooking Creme with chicken Kae

Mix up goat cheese, bacon pieces and green onion. Cut a slit in the side of each breast. Stuff the slit with goat cheese mixture. Saute each side of the the breast, then put in the oven at 350 degrees for 20 minutes. Awesome taste, and healthy too.

Chicken Marsala
Chicken Scallopini
Chicken Parm

Ugh...boneless chicken breast? Easily the the most boring choice of all poultry.

My easy suggestion is to throw them in the freezer and go out for dinner! :thumbsup2

Do you have an apple butter? I just discovered Apple BBQ chicken (2 parts apple butter to 1 part bbq sauce). Its delicious!

No Fry Chicken Parmesean

egg, then bread crumbs, coating well. Arrange chicken in a baking dish and bake uncovered 20 minutes. Pour sauce over chicken, then top with cheese. Bake an additional 10 minutes or until chicken is no longer pink. Serve, if desired, with hot pasta.

This is quick and easy:

BOURBON CHICKEN

2 lbs boneless chicken breasts, cut into bite sized pieces
1 T olive oil
1 garlic clove, crushed
1/4 tsp crushed red pepper flakes
1/4 cup apple juice (i actually used diet orange pop instead)
1/3 cup light brown sugar
2 T ketchup
1 T apple cider vinegar
1/2 cup water
1/3 cup soy sauce

heat oil in a large skillet and add chicken pieces and cook until lightly browned. remove chicken.

add remaining ingredients, heating over medium heat until well mixed and dissolved. add chicken and bring to a hard boil. reduce heat and simmer for 20 minutes.

slice them in half so they are very thin
lay a slice of ham and a slice of cheese on top (supposed to be swiss, but we use provolone a lot)
roll them up and secure w/a toothpick

dredge in butter and roll in breadcrumbs
bake (I think it's at 350 for 25min or so)

Mix a bit of sour cream w/a can of cream of chicken soup for a sauce.

Even my kids eat it.. :)

I know you said you're sick of Shake & Bake, but just wanted to give you an alternative if you find yourself with Shake & Bake in the pantry. Instead of egg, coat the chicken in bbq sauce before slapping them in the breading. SO good. (I use Oven Fry Extra Crispy instead of Shake & Bake.)
