So, I had my first "hand made" ice cream cookie sandwich from MS Bakery many years ago (had them out in DL too) - not the prepackaged Nestle ones from the cart. I fell in love with the soft, gooey cookie ice cream treat on the first bite. But I've noticed over the years that the cookie has become harder and harder - AKA way overbaked for my liking. It doesn't matter where I get them from now - MS Bakery, the place in Liberty Square, the little ice cream window at DL - all of the cookies are hard and crunchy. And I'm too impatient to let the ice cream melt into the cookie to soften it!!!
I can see where the overbaked cookie might make it easier to assemble the sandwich. But they're not near as good as with a just underbaked, soft, gooey, chocolate chip cookie.
I don't buy the cookies alone from any of these places. Is the straight cookie overbaked and crunchy too or do they special overbake some to use for the sandwiches? If the regular cookies aren't overbaked I'll try specifically asking for the regular kind.
