I called the Disney Restaurant Reservation line yesterday and booked a bunch of reservations. Among them were Cinderella's Royal Table for dinner and Akershus for lunch for 2 adults and one child. They asked for my credit card number, which I thought was just to hold the reservation, but after reading some posts I am wondering if my credit card is being charged. Anybody know the amount? (Too early for me to check my credit card)

Also, what if I need to change the time, number of people, or cancel it? Will I get charged extra or not be able to get my money back?

I made Akershus reservations (yes, three reservations, I now have only one) months ago. Never saw a charge on my credit card.

You can cancel with no charge up to (I think) three days before reservation.

You can cancel online (I did!) and there will be no charge.

If you need to change the number of people, you may need to call. Or make a new reservation and cancel the old one.

I think I read that you would be charged $10 per person if you do not keep the reservation.

For Akershaus there is no charge in advance, you give your CC as security only. If you don't show, they will charge you a penalty for each person - I've heard $10-20 per person, depending on location.

CRT is fully charged in advance, unless you are on the DDP.

You can't just change the time, # of people on a reservation - you have to make new ones. As for cancelling, restaurants that have a credit card hold or payment in advance require either 24 hours or 48 hours notice - I can never remember which or if they are all the same window.

Yes, that's correct - it's refundable up until that point (your confirmation on the Disney dining site will say what the time frame is, and normally when you book online the CM is really clear about the cancellation policy, but of course, they normally tell you how much is being charged to your card as well).

As previously noted, Akershus doesn't charge up front - just needs a CC to hold (you will get charged a pp penalty fee if you're no shows). CRT, however, has changed to full payment at booking.

If you're not sure how much you paid, you can call your credit card company. At any given time they can give you a detailed list or verbal confirmation of any recent transactions. I know with mine, I've been able to get same day confirmation of transactions by phone.
