I'm a big fan of the Fiber One Oats & Chocolate bars.
I found a lot of things I like to buy, often at Trader Joe's.
Roasted Red Pepper & Tomato Soup (in a box).
4 cups per box. I tend to make half a box at a time, full bowl is 4 points. I often pair it with a "grilled cheese" made in the toaster oven by putting
Arnold's Sandwich Topper (1 pt) on the tray open faced, folding in a
Velveeta Single (1 pt) on one side while it melts. When it's melted, I just put the top on the sandwich and it's melty goodness time.
Quinoa and
Ratatouille, also items from Trader Joe's.
Quinoa is a small grain, which you can cook like cous cous or rice. For my serving, I take 1/4 cup dry and 1/2 cup of water (or chicken stock), and I cover it at a simmer for about 12-13 minutes after the water starts to boil. When it's nearly done, I take a 1/2 cup from a jar of ratatouille, and I heat it up a bit. When the quinoa has absorbed the liquid, I mix in the ratatouille, and it comes out like a Spanish rice. The quinoa is 2 pts and the ratatouille is 1 point, making a really full dish for 3 points. It's a nice alternative to a potato, and I usually have is as a side dish along with another veggie side, usually with chicken as my protein.
Edamame (in pods - 1 pt for 1 cup)
Awesome snack. Soybeans, and I am addicted. You can steam them or boil them for a few minutes, then throw salt on them in a bowl. I just use my teeth to push the beans from the pods into my mouth. The pods are not meant to be eaten. They are too fibrous. You can order these as an appetizer at any Japanese restaurant.
Frozen veggies - often from Trader Joe's! Love their French green beans.
Breaded Chicken Tenderloins from Trader Joe's.
Two small or one large piece can be 3 points. I have the WW scale to help gauge what I get from the bag, as the sizes of the chicken pieces vary.
Now that the warmer weather is here, I am going to the produce stores more. Last time I went, I bought fixings for guacamole: avocados, red onion, lime, cilantro, and a tomatillo. I didn't buy a jalapeno, but you can. I decided to do the tomatillo to change it up a bit. Just add salt to taste, and it's awesome. I made my own tortilla chips by baking whole wheat tortillas cut into wedges with some cooking spray and kosher salt sprinkled lightly. I had to watch them carefully before they burned. I use veggies as dipping agents for guacamole to keep points down, too. 1/4 cup of guacamole is 2 points, and 1 tortilla cut into 6 piece wedges (or you can cut 8 to have smaller wedges) was 1 point.
I also bought broccoli, zucchini, asparagus and cremini (baby bella) mushrooms. Those are great when you want to sauté them in some olive oil with garlic. Bought some salad fixings and fruit, and I had lots of filling foods for days.
At Costco, I found
Sensible Portions individually wrapped oatmeal and dark chocolate chip cookies. They are 2 points each and make a great snack with skim milk.
Hershey's Stix
60 calories each, great for when you must have a chocolate fix. I don't buy those as often when I have other sweet snacks available.
And I will buy the Weight Watchers or Skinny Cows ice cream treats depending on whichever is on sale.
I have a tip for the low points sandwiches on Arnold's toppers. I buy the thinly shaved deli meat packs. 4 slices are a point. I will get out a wedge of the Laughing Cow light garlic and herb, and spread it out on both sides of the topper. I add the deli meat, and it's good to add a piece of romaine lettuce and some tomato slices. I sometimes roll up the meats and cheese spread in the 1 pt whole wheat tortillas, too. The bread, meat and cheese add up to 3 points, total.
I know there's a lot of stuff I'm forgetting, but that's what I like to eat.
