I need help with cheese!

We went out to our favorite Mexican restaurant tonight, and DH finally asked what kind of cheese they use. I think the waiter pronounced it similar to "candle A." He had a really thick accent so I don't think I understood.

Has anyone heard of anything like this? It tastes like American cheese.

My guess is either: Queso Asadero, Queso Blanco, or Queso Chihuahua.
 

Could it be Cacique, pronounced kah-see-kay?

They sell that cheese in the Mexican aisle in my grocery store. Lots of different types.

It could be? I think I'm going to have to try a few and see which one it is. I might stumble on something really good trying, right?
 
At Kroger (and probably at any large chain grocery store) they have a refrigerated section of Italian and Mexican food. In the Mexican section they have a white cheese product which is sold in a small plastic cube. This stuff is the consistency of nacho type cheese and it's really good. It might be queso blanco, but if you see it and it looks like the stuff at the restaurant, I'd say the chance are good that's what it is.
 
What color was the cheese?

I know when I was in California, at the taco trucks, they would use a white powdery cheese. Kinda looked like kraft parmesan cheese for pasta, but it's made from goat milk. I didn't like the taste of it though.
 
just call the restaurant and ask them what type they use on that dish ! im sure they will tell you, i have done that before and never had a problem.
