I need frosting!!!!!!! And what the heck is Cake Flour???

I have a recipie for a cake but the frosting recipie it comes with needs ricotta cheese, and I don't have any, does anyone have any chocolate frosting recipies that don't require ricotta chese or heavy whipping cream?

Looking at my cake recipie, I need cake flour, is this something that I can make? Or do I need to find another recipie???

I there there is one with 10 X confectioners and water. I 've used that, and its sort of like a drippy glaze.

It looks good on a bundt cake

Simple frosting:

1/4 cup softened butter/margarine
1 1/2 cup powdered sugar
Milk to desired consistancy

You can play with the amounts to get it to look like what you want.

Cake flour is refined a bit differently than all-purpose flour and lends the "lightness" to a cake. Most grocery stores carry a brand called Swan's (usually is a red box, near the top shelves of flour).

I've substituted all-purpose flour in an emergency and the cake has been fine. Here is a website with info on substituting all-purpose for cake flour:

You can make cake flour by replacing 2 T flour with cornstarch.

"Perfectly Chocolate" Chocolate Frosting

Amount Measure Ingredient -- Preparation Method
-------- ------------ --------------------------------
1/2 cup butter or margarine
2/3 cup cocoa
3 cups powdered sugar
1/3 cup milk
1 teaspoon vanilla

Melt butter.
Stir in cocoa.
Alternately add powdered sugar and milk, beating on med. speed to spreading consistency.
Add more milk, if needed.
Add vanilla.
