I just made creamed spinach

For some odd reason I had a taste for creamed spinach...AND what is even weirder is that I never even had it before!! No...not pregnant either!!! So, I looked up some recipes and found a pretty easy one....just got out of the oven now....and it is actually pretty good!! My kids won't even give it a try....DH probably won't either....good...more for me!!! LOL!!!!

PS....I think it is my new dish!!

I love creamed spinach and so do my kids, but it is NOT good for you. The way I make it (with real cream) has enough cholesterol to kill a horse. Yumm.

I found a super simple recipe...it took no time at all. I used the oven method...


Creamed Spinach

2 (10-ounce) package of frozen chopped spinach
1 (8-ounce) package cream cheese, softened
2 tablespoon melted butter
1/4 teaspoon ground nutmeg
2 tablespoon Parmesan cheese

Cook spinach according to package directions; drain well. Stir together cream cheese, butter and nutmeg. Stir in spinach, spoon into lightly greased 1-quart casserole, sprinkle with Parmesan cheese.

Cover and bake at 350 degrees F. oven for 20 minutes. Or cover and microwave at 100 percent power for 3 minutes.

I don't really have a recipe. I saute some chopped onions in butter. Add spinach (I prefer to use fresh but frozen works well too) to wilt. Once wilted add heavy cream and simmer over low flame until reduced. Add salt, pepper and nutmeg to taste. It is to die for.

I love creamed spinach. I haven't had any in awhile. Maybe I will have to make some for christmas, that or spinach dip.

Yum, that's very similar to the spinach dip that I make. I love going to Sam Seltzer's around here, they have creamed spinach that is just like what you made. Yum.
