I have to book my fast passes next week.

I wouldn't do anything different fo rthat week than any other.
Try and get your most popular ones first.
Most likely they may be FoP and SDD, do SDD first, then FoP. If you can do those laster in your trip, your odds go way up.
Next would be 7DMT and/or PP.
Once I have those, then i go to the next most important ones. If I don't have any must see, then I just go day by day.

If you can't get what you want right away, keep checking as people change their minds and FPs become available even day of.
 
Towards the end of your stay try to book your most popular FPs.
During busy times like Christmas, I just stay at least part of our time CL and purchase the FP program that allows us to get ride reservations a month earlier than others; works well.

Another possibility is to keep your eyes open for changes in park hours. Last year, MK's hours were expanded while we were on site and we picked up Thunder Mountain and the Snow White Dwarves roller coasters a few times in the late evening as our 4th and 6th FPs.
 
Put the hardest to get FP+ as late in the trip as possible.

Don't book in chronological order. Book FP+ based on difficulty. For example, FOP on day 7 first, then SDD on day 6. Jump around days until you have them all.

Ignore crowd calendars. Don't plan days around them.

Keep checking if you don't get the FP+ you want.
 

Does anyone have any strategies for booking fast passes for xmas week ?

Get a pencil and some paper and write down the parks you're going to in order and then put your FPs on those days. Get the hardest ones first. When I booked mine back in April for our June trip, I went to day 3 of our trip and booked 7DMT. That was 60+3...which was technically my 4th day in the parks. AK was our 60+0 day. I had no problem with any of those, but FoP was not my thing. Then I had MK on 60+1 and because I had Mine Train on our second day in MK all the ones I picked for our first day was a breeze. EPCOT was 60+2....another easy day, but I wasn't interested in Soarin'. I remember when booking TT that within a few hours all the early morning times were gone. Son and I had a 9:30am FP for it. We rope dropped Frozen and then went to see Anna & Elsa. We arrived at TT around 10am if I remember correctly. We had great luck within the parks picking up FPs throughout the day. I would take the first one available and then change to the time I wanted. Good luck!
