My favorite tip for getting reservations when they already seem booked:

Call them every day starting at 6:55 am Eastern Time! That's when all the cancellations from yesterday become available. I have booked amazing time slots and meals, especially in the castle, from various dates past the initial 180 days when they're booked. You might have to keep trying, but it can happen.
