I have a pound of frozen hamburger thawing......

I've got a 1lb of ground turkey thawing and that's going to be coupled with a jar of salsa, breadcrumbs, and some shredded cheese for a Mexican meatloaf.

Or I am going to use it for a Mexican lasagna (cooked with salsa, onions, and frozen corn layered with cheese).

Brown it
Add to a casserole dish with a can of chicken noodle soup and a can of chicken broth and 1 cup of uncooked rice and cover
Cook in 350 degree oven for 45 minutes or until rice is cooked through
Check as you get close to the 45 minute time to see if you need to add a little water to keep moist and to see if rice is cooking through. You may need to add up to 15 more minutes cooking time.

What do you call this?

Sloppy joes?

Hamburger with mushroom gravy and mashed taters?

Ingredients
3 tablespoons olive oil
2 pounds ground chicken breast
2 tablespoons chili powder
2 teaspoons ground cumin
1/2 onion, chopped
1 (15-ounce) can black beans, drained
1 jar medium salsa
1 jar stewed tomatoes
1 cup frozen corn kernels
Salt
8 (8 inch) flour tortillas
2 1/2 cups shredded Cheddar or shredded pepper jack
2 scallions, finely chopped
Directions
Preheat the oven to 425 degrees F.

Preheat a large skillet over medium high heat. Add 2 tablespoons extra-virgin olive oil - twice around the pan. Add chicken and season with chili powder, cumin, and onion. Brown the meat, 5 minutes. Add salsa and tomatoes. Add black beans and corn. Heat the mixture through, 2 to 3 minutes then season with salt, to your taste.

Coat a shallow baking dish with remaining extra-virgin olive oil, about 1 tablespoon oil. Cut the tortillas in half or quarters to make them easy to layer with. Build lasagna in layers of meat and beans, then tortillas, then cheese. Repeat: meat, tortilla, cheese again. Bake lasagna 12 to 15 minutes until cheese is brown and bubbly. Top with the scallions and serve.

Here's an old favorite from Taste of Home:

Taco Bake

1 lb. ground beef
1 small onion, chopped
3/4 c. water
1 pkg. taco seasoning (can use reduced sodium)
1 15 oz. can tomato sauce
8 ounces elbow macaroni, cooked and drained
1 small can chopped green chiles
2 c. shredded cheddar cheese (or Mexican blend if you like)

Brown beef and onion in skillet; drain. Add the water, taco seasoning, and tomato sauce; mix. Bring to a boil, reduce heat and simmer for 20 minutes. Preheat oven to 350 degreees. Combine macaroni, meat sauce, and 1 1/2 c. cheese in baking dish. Sprinkle with remaining cheese. Bake uncovered for 30 minutes or until hot.

Crockpot Lasagna

1-2 pounds of ground beef (brown and drain and season to your taste)
1 box of Lasagna noodles
1 Jar of tomato sauce (any kind, chunky works for me)
1 Jar of cheesy Alfredo Sauce
1 big bag of shredded cheese

Put layer of noodles in bottom of pot.
Follow with a layer of meat,
Next a layer of spaghetti sauce,
Next a layer of Alfredo sauce,
Next a layer of cheese.

Keep repeating layers two or three more times (or until you run out of ingredients!)

Cook on hight for about 2 -2 1/2 hours.

I would brown it with some sauteed onions, carrots, any other veggies you might want to throw in and then dump it in my crockpot with a jar or two of spaghetti sauce, large can of crushed tomatoes, some italian seasoning and let it cook all day. Then I'd have homemade pasta sauce that I could use tonight and freeze the rest or use for sloppy joes over the weekend.

kind of depends on what else you have on hand.

chili is quick and easy

manwich/sloppy joes

cottage pie (if you have even canned or frozen veggies and some instant mashed potatos)

filled croissants (cook the meat with your choice of seasoning, put a good sized spoonful onto each pop and fresh croissant, roll and bake croisants according to regular directions). we've done this with taco seasoned-used salsa, guac. as toppings. done it with more of a stroganoff style of seasoning-used jarred brown gravy to top.

hamburgar soup-brown, season, add liquid (i use water, beef buillon cubes, red wine). chop up any fresh veggies hanging around (or if none-canned or frozen, but hold off till near the end of of cooking to prevent the veggies from getting mushy).

i had some stroganoff mix on the shelf recently and used it with ground beef-tastes the same, just a different consistancy.

I have a lot of tortillas so I'm thinking mexican lasagna.... I use refried beans, black beans, cheese and flavor the ground beef like I was making tacos. Everyone loves it.

Taco salad!!!!!:cool1::cool1::cool1:

This is what I would make too! I make mine with lettuce, browned hamburger mixed with Ortega taco sauce, black beans, corn, tomatoes, shredded cheese, guacamole, jalepenos and crushed tortilla chips. I like to mix ranch dressing with salsa for the dressing. Yum!

I'm making a stockpot of soup with mine tomorrow. I make mine a lot of different ways, but this one is going to have: browned ground beef, onion, carrots, new potatoes, green beans, peas, mixed beans, corn, lipton onion soup mix, and tomato buillon.
