My 2 cents, for what it's worth...
You see, I'm a fairly big girl (5'7 - 235 pounds). I work out 5 times a week, eat whole real food, whole grains, fruits and veggies and mostly vegetarian. In the past 10 years, I've lost 85 pounds.
Just by changing the way I eat and by moving. In the past 4 years, my weight has been the same. I know I need to eat less, but what can I say, I love to eat! 
When I'm on vacation at WDW, I try to eat fruits and veggies as well but I do overindulge in sugary snacks and desserts as well. I limit my comsumption of sugary drinks by ordering water bottles, and we always have water with us in the parks.
When I come home, even with all the walking, I've usually gained 3 to 5 pounds. But, I have found that after a couple of weeks of going back to my "regular" schedule of exercising and eating right, the weight comes off. My conclusion has been that it's mostly water retention from all the salty and sugary foods I have been eating for a week of two. After a couple of days home, it usually starts to come back to normal.
I am not trying to judge anyone, but for me vacation is vacation. A break from my daily routine. While I weigh myself regularly, I would never bring a scale with me to Disney or any other vacation for that fact. I think we all deserve a break as human beings, and weighing ourselves and worrying about weight gain during vacation is one of them.
