HS Area Dining Help?

Hi, all.

I've got a trip coming up in May, and my travel buddy and I are going to be meeting up soon to decide what ADR's we want to make come our 60-days out mark at the beginning of March. Unfortunately, there's no guarantee we'll see each other sometime in February so we wanted to have a plan set sooner rather than later. That said, we've pretty much limited down to a few top choices for each of our park days... except for HS.

I'll be honest, I'm kind of stumped. Here's the criteria I'm trying to meet:
  1. Somewhat close proximity to HS, doesn't have to be in the park. Not against bussing somewhere. We aren't doing park hoppers though, so can't hop over to Epcot to dinner.
  2. Something that will appeal to my travel buddy's tastes - both of us are on the adventurous side of eating, but while I like standard American fare plenty fine she's less keen on it. She's more one for seafood and veggies than meats, so spots known for their steak aren't the best option unless they have other options of pretty even quality.
  3. Somewhere I haven't been before, I want to try things I haven't already on this trip. For HS area this would include Hollywood Brown Derby, Mama Melrose, and all table service available at the Yacht & Beach Club.
  4. Even though numbers 2 and 3 already pretty much rule it out, specifically NOT Sci-Fi Dine In. Unfortunately eating there made me sick.
What would you recommend, without taking budget into account? TIA!
 
Maybe Flying Fish at the Boardwalk? It's one of our very favorite spots. It would meet your travel pal's criteria perfectly, though it does also have incredible steaks. It's more fine dining than many of the restaurants around, so it may end up feeling too fancy, but definitely worth looking into!
 
There are some good places at BW, S&D, and BC/YC. Flying Fish is an excellent suggestion. BlueZoo, Shula's, and several other options at S&D. One of our favorites is Amare at the Swan Reserve - very walkable (or boat) from HS.
 
I really liked Trattoria al Forno when I went last weekend. Though we had breakfast (which was great) their later options sounded great.
 

I agree with Swan/Dolphin, they pretty much have just about any type of food you might like. There menus are on their app.
 
If you have the time for Skyliner, Toppolinos is another option
