How yummy is the Roasted Beet Salad at WPE?

I am so looking forward to trying this! I love love love beets and eat them as often as I can. This just looks so delicious to me. Have you tried it? Was it everything you hoped for and more?

It doesn't help that I'm pregnant and having really weird, intense cravings right now. If anyone has any pics or a copycat recipe or can otherwise help me assuage this unbelievable desire for a roasted beet salad, I would be so grateful!

I love beets too!
I haven't had the one at WPE but the one at Sunshine Seasons in Epcot is good as is the one at the Coral Reef (better but more expensive).

It's a great salad but there aren't that many beets. The main ingredient is spinach and the beets are just one of the other veggies mixed in.

I've never been to WPE, but I'll second a previous poster's thumbs up on the roasted beet and goat cheese salad at Sunshine Seasons. I believe it is made to order, so you could skip the goat cheese if you want. The candied nuts on it are divine!

I think the dressing is honey-lime-cilantro.

And another vote for the Sunshine Seasons salad. When I got it last time, a man actually came up to me and said, "My wife was admiring your... salad," then asked me what it was and where I got it.

Sorry I could not answer the original question, although I would wager the salad at WPE is not as good as the bacon-wrapped meatloaf.
