How would a trip be between December 28th and January 3rd?

We are also going 12/28 - 1/2. This is their busiest week of the year. MAJOR crowds. We made our ADRs as soon as we could for NYE, and have all our ADR for the rest of the week. Be prepared for unbelievable crowds -- especially at NYE. You might do a search on this forum for NYE threads.

We also will be there the 27th to the 2nd. Can't wait. NYE in Epcot. Ressie at Tepanyaki. We have all ressies for dinner for the whole week. Planning on doing fast food for lunch. Should be a good trick. Well here is to the brave and the many.
