I just came back from 6 great days with 4.5 and 2.5 kids - and I am also from NJ.
I will agree with others that each family is different but... in my opinion you can pick on good ideas. I made some mistakes on our trip but I think we did pretty well overall.
so to give you some general park ideas:
1) AK - EMH - but we arrived around 8:45am
- 9:05am --- Safari tour (we used FP+ but it was walk on at that time)
- 10:00 am --- Dinosaur ride with 4.5yrd while I went on the carousel next to it
- 10:15 am --- snacks / drinks time
- 10:30 am --- Flights of Wonder
- 11:00 am --- snacks / drinks time
- 11:30 am --- Tusker Houser lunch and character M&G
- 1:00pm --- Nemo Show
- 2:00pm --- departed the park
in between we took numerous pictures, allowed kids to play in boneyard area, got video of them playing the instruments, looked for and watched some animals.
by 2:00pm my younger (2.5 yrs old) was tired and started to fall asleep as well as it got really hot.
My older one is not into animals and AK was our 3rd park in 3 days so we were OK with leaving earlier. We could have stayed 1-2 more hrs but decided to leave and give kids a break from the heat and avoid potential meltdowns.
We arrived at the hotel around 2:30pm, allowed kids to go to the swimming pool for 45-60 minutes, we took 1 hr nap and went to Ohana for a dinner at 6:30pm.
After the dinner, we went to a camp fire and stayed for electrical water parade while kids played in the sand.

one more thing - our kids needed mid day breaks and naps. I mean coming from NJ where you had 50F 10 days ago to 95F heat in Fl --- our kids did not last long. you could see that around 11-11:30am after 3 hrs in the park --- they needed break. lunch in the AC location was a must but a nap in the hotel did wonders for us. it allowed us to go to night time activities rather than be in our room.
