How telling is available reservation times correlating to park hours?

Is there anyway to tell what time the parks might open and close based off of what reservations are available for things that are farther then 6 weeks out yet under 60 days?

For Disneyland, Ogas Cantina for party of 1 - if you can book for 22:25 then expect 11pm close. 23:25 expect midnight close .
