How soon do I need to make reservations?

I would like to eat at a few Disney restaurants. Can I make the reservations when we get there, or do I have to do it sooner.
(We are going the last week in August)
I am interested in:
The sit down and buffet at the AKL,since we are staying there,
The NE Clambake at the Beach Club,
The Ice Cream social at the Garden Grill.
The Ohana Character breakfast at Poly.
The Trails End Buffet at FW.
And maybe splurge on the Hoop de Doo.

I would definitely make the reservations for the Hoop De Doo (it may even be too late), O'hana's and the Ice Cream Social. We never make PS for the other 2 buffets (clambake and Bomas), we usually put our names on the list when we get to the restaurant and have no problem. Note, we usually get there when the restaurant opens to avoid long waits.
