How should I book?

I am a sucker for planning and love to get things done sooner than later!! We are planning a trip for our son's 5th bday next August 7-12. I'm sure there will be deals out later but I really want to put in our 2 rooms just so I know it's done. We usually do a package with tickets through Disney so if I book now how can I get the deal prices when they come out. will they fix the pricing or do I lose out?
Also what are the odds of getting joining rooms at the GCH?
we are 3 adults, 2 kids(5 and 6) and an infant.

As fas as the rooms on GCH I couldn't help you. We have never needed any more than 1 room.
