How reliable?

Planning to go to WDW in first week of May. Barring weather, how accurate are, or what is the likelyhood of Disney changing, the park hours, Magic Hours, and event times listed on this website? Pretty much set in stone? Any input appreciated, thanks.

Not, not set in stone at all. First, understand that they just started releasing park hours this early, so it will be some time before anyone has a good read on how accurate these hours will be. Second, even with the old system, where park hours were posted a couple of months ahead of time, there still would be changes. Most of the time, the changes are most often just pushing closing time out, but sometimes there are other changes, such as an early closing due to an unforeseen special event.
 
We found before our trip in June that they also changed some of the EMH days and hours. It was no big deal to us, but I would not set up my park stragegies and dining reservations based solely on the current park hours. Just let them be your guide and assume that they will change in some way.
 

Disney will look to see what they think crowds will be like closer to the date, then figure out park hours accordingly. They are likely to shift by an hour or so as the date gets closer.
