How quickly do buffets turn over?

Specifically, Crystal Palace from breakfast to lunch? Is everything pretty much switched at once, or do breakfast and lunch items mingle together? I was planning on an 11:30 lunch ADR, but would I get to sample a wider variety of things with an 11:00 breakfast ADR?

eta: one more quickie question - are you charged based on when you check in or when you pay your bill?

Not sure about CP, but I've heard about resort buffets having a lunch carryover if you are there 30 minutes before they switch to lunch.

The change is gradual. If you want more breakfast items, then switch to 11:00. It will flow into lunch pretty easily.

You are charged by when you check in, not when you check out.
