How much notice we'll we get

Just out of curiosity as ya'll are full of knowledge, if Disney decided to change some of the seats for FOP to accomodate larger guests (I know a few people have been turned away and wondering if some seats may be upgraded in the future), does the ride itself have more than 1 room that the seats are in as I'm sure I read somewhere that there are 4 or so rooms?

If some seats were to be modified, would the whole ride be shut down or just a room/section at a time?

Please don't assume that I know anything you don't in regards to new seats, it's just a question for maybe the future :)
There are 4 rooms so yes, if they did decide to modify seats they could do it in just 1 room, or 1 room at a time, whichever fit their plans best.

Okay I see the thread has turned into one big joke and that is my fault but let's say it does go down how much notice we'll disney give if any at all
Well, if you already have a FastPass+, and it is an unscheduled outage, I got another FastPass+ that I could use on anything except Na'vi River Journey. [Disclaimer: Been there, done that. Your experience might vary. Past performance is no indicator of future results.]

Except if your FP is for FoP or Navi your replacement FP will be valid for the ride you held when it went down. But if you had a FP for say, EE and it goes down for weather that replacement isn't good for FoP or Navi.

I remember reading about speculation that FOP, at least in part, was having some ongoing issues with one or more of the rooms and that they might have to take that portion down for a thorough maintenance session. It was around the time the fire alarms kept going off and people were so upset because they waited in the standby line for a long time and basically had to start over when the ride came back up. There were also reports where people would enter the ride rooms and several seats would be out of service. I don't think it would be unreasonable to expect that it could go down in sections to take care of issues that have come up now that it's fully operational.

Yeah but whatever those issues were they have resolved so who knows
