A lot just for 2 people

You could look into a different resort, but CB isn't known to be overly pricey. I have heard that you can rent DVC points, and this can save money, but I have not done this myself. There are a few ways to rent points, but i know there are companies that facilitate this, and sometimes run point specials for specific resorts for certain dates. Someone else with experience can chime in as to the benefits.
You can order groceries to be delivered at the resort or stop at a store and eat some various meals on the cheap from these purchases and splurge on what you enjoy for a few meals and snacks.
Since it is a big trip, you might just have to decide if keeping costs low, or if the experience ranks higher (allowing you to swallow the price tag). For our big trip mentioned above, it was a conscious decision to put experience and convenience over the cost, and thus we saved to pay for the experience which was multi faceted and encompassed a lot. Plus we were celebrating a milestone and wanted a special experience.
Overall, 2k per week, per person for an international trip isn't too bad just depends on if it comfortably fits your personal budget. Good Luck, planning and anticipation are part of the fun!

For our family of 4, we usually spend about $1000/day including airfare, airport parking etc.

That's pretty much where we are at as well. Typically a week in a balcony cabin; add in hotel, car, tips, excursions (this is where we can spend a lot depending on what we are doing) and on board spending usually comes out to about $1000/day.

If we had to spend that on airfare it just couldn't happen, but driving from the UK would be problematic, to put it mildly.

I did get all three of us on a holiday to Ireland for about $2700, all in, but we went in December, and the pennies were screaming.

For a family of 3 I spent less than 3k for the 5 night cruise (w/ veranda) and less than 2k for 3 nights 3 day tickets w/ meal plan in the parks. So our 8 night land and sea was less than $5k.

For our trip to Disney a year and a half ago, we spent $300-$3500, including gas, hotel while traveling each way, timeshare fee, parking, tickets, food, souvenirs, everything. We had 5 park days and a day at Lego Land. For the next trip (a cruise), we're scrounging to save as well. The one I'm looking at for 2 years from now (if they offer the same cruise) will probably be around $3500 for an ocean view room (family of 4), plus airfare (anywhere from $1000-$2000), transportation to and from the port, hotel if we don't fly in the same day the ship leaves, excursions (only 2 stops, but the excursion we want to do on one will easily be $600), souvenirs, tips.... It all adds up. It's a once in a lifetime trip for us, so we want to make sure the kids experience as much as possible, but we don't want to break the bank!

If you ask some folks, we spend far too much. I joked that this last cruise cost me the GDP of a small nation. I don't like to put a price tag on the memories, though. When I go on vacation, I don't want to worry about money. That said, I do a TON of planning before we go and try to save some where I can (Disney Reward Visa dollars, gift cards bought at target, frequent flyer miles, etc.).

Is that $3,500 USD on a 5 night DCL for four people in an ocean view? We're eagerly awaiting the summer 2017 itinerary release. Idk if it's because I'm researching 2016 cruises to get a price estimate, but I'm expecting to pay about $9-10,000 (USD) for our family of 5 (one will be a year old, so his fare isn't much compared to the rest of us) for ocean view on a 7 night DCL! That's ONLY cruise fare - no excursions, Palo/Remy, tips, travel to/from port, or our planned ~2 weeks at WDW/Uni after the cruise.

I know prices are lowest the first day itineraries are released and only go up from there, but I wouldn't expect the summer 2016 prices to be thousands more than summer 2017 (I'd expect researching summer 2016 dates close to time of travel to be balanced out by any annual fare increases for summer 2017, if that makes sense).

I think the only way to get a "decent" rate is to travel off season. Unfortunately we cannot do that because we our school district is a nightmare (in terms of unreasonableness) (okay in I other ways too but on paper it looks like a very good district). So bad that we are homeschooling one child. But if you can swing it and it sounds like a lot of people can it is well worth it.
