Both times we went to Disney we went in Nov. and loved it. With DS starting college in the fall, the only times we can go as a family is summer and during Christmas break. Florida in the summer does not appeal to me, so looking at Jan 3- Jan 9. Very frustrated that we can't book this until July or at least price it out. Any idea what prices are like immediately after the holidays? We are a family of 5 who usually does dining plan and tickets w/hopper.
 
I'm no expert, but we did visit WDW at that same time. The prices were very expensive (and crowds crazy) until the Monday after New Years when a lot of kids go back to school. This website has a list of when value season started this year, and a projection for 2016.

Tickets and dining plan cost the same, no matter when you stay.

So the real savings would be on your resort room and possibly your airfare costs. The savings will depend on the resort level. You can check the difference in 2015 rack rates here. It will give you an idea on how much the rates can vary.

Another thing to keep in mind is that discounts for packages can be better during different times of the year. Your family of 5 might do better with a *free* dining discount than by traveling in January when the weather is colder and the parks close early.

I know how you feel about that last family vacation. We ended up suspending family Disney vacations when the first one entered high school. Too many summer activities and too little time off during the year. We began doing family vacations elsewhere, during the summers when the kids were in college. It was much more affordable (and pleasant) to fly to Mexico or the Bahamas than it was to stay in Disney in July.
